Stuffed Mushrooms

This was sent in by beanbuzzcock@hotmail.com. I personally dislike mushrooms but if they're your cup 'o tea, then give it a shot. Also note that no amounts were given, so this may be more of an idea than recipe.

Ingredients:


1: Destem and wash 'shrooms
2: Dice stems, tofu, and veggies, including tomato.
3: Boil all veggies (except for tomato) until they are soft.
4: Sautee caps in light butter until softened and warm, then set aside.
5: Throw diced tofu into pan, sautee and season to taste. (I like to use soy sauce, cajun, and itailian.) Squish it up, then mix it in a bowl with your hummus.
6: Add mushy veggies (except for tomato) and stir into mixture.
7: Put this mush inside of the shroom caps.
8: lay shroom caps on baking sheet and set oven on BROIL setting. (350 degrees) Usually this takes about ten minutes for me, but you want to wait until the filling is either a bit browned or has formed a slightly crispy top.
9: Take out of oven and sprinkle diced tomato pieces on top. Season with a bit of basil or thyme. Voila! Stuffed mushrooms!
