Pancakes

"I see your pancakes come from a box, not that is anything wrong with the old Aunt Jemima I use her often. But when you like to go it Home Made from scratch here is what I do."

Stir together and add enough soy milk to make thick batter. Soy milks are different so you have to adjust the amounts. I make my own soy milk soy milk so it is thinner. I also add the okara, (the fiber left over after making soy milk from beans) about 1 Tblsp. to give it some fiber.

Try adding fruit, I like blueberries, frozen is ok as long as you wash them off first.

I make a large batch of this and scoop out just enough for one meal.

This is a versitile recipe, you can add more sugar, cinnamon, and oatmeal (dry) and after you add the "milk" you can pour it over fruit that has been sweetened and floured in a greased pan. Makes a great cobbler.
