Now this is something that I don't know why we didn't try before. Pancakes, seems easy enough. Cooking them is easy, it's finding the right mix that doesn't have eggs or whey or milk or nonfat dried milk or...well, you get the idea. These actually came out damn near perfect. I dare you to tell the difference between these and pancakes made with eggs and cow juice.
What we did was buy a box of Aunt Jemima 'The Original' Pancake and Waffle Mix and then follwed the instructions on the back, substituting vegan ingredients where needed.
Mix everything up in a bowl. Stir until all the lumps are gone.
Heat and grease pan and drop a big spoonful or two on to the pan.
Now it's up to you, when the edges look dry try to flip them over. This is just trial and error (at least it was on my part).
When the seem done flip them over onto the place, douse with syrup and enjoy. The box says this should make 10 - 12 pancakes, we got about 8.
